Instructions
- Cook the bacon:
In a large pot over medium heat, cook bacon until crisp. Remove and set aside, leaving about 1 tablespoon of drippings in the pot. - Sauté aromatics:
Add onion and garlic to the pot. Sauté until onion becomes translucent and fragrant. - Add potatoes and liquids:
Stir in potatoes, bay leaf, thyme, clam juice, and water (or stock). Bring to a boil, then reduce heat and simmer until potatoes are tender—about 10–12 minutes. - Make the roux:
In a small saucepan, melt butter and whisk in flour until smooth. Cook for 1 minute, then gradually whisk in 1 cup of the hot chowder liquid until thickened. - Combine and finish:
